I can’t remember if I’ve ever heard of a homemade spaghetti squash recipe that didn’t involve making your own spaghetti squash.
So, I decided to give it a try.
While I think spaghetti squash has its place in the world of pasta, the recipe I came up with is just perfect for a fall salad.
The flavor of the spaghetti squash lends itself well to a dressing made with a tomato paste.
I added a dash of vinegar and lemon juice to the dressing and then drizzled the sauce on top.
I love how the sauce comes together quickly, so you don’t need to spend a lot of time mixing the ingredients.
To make your own homemade spaghetti squash, just add the squash to a large pot with enough water to cover the squash by 1 inch.
I cooked the squash for about 4 minutes on each side until it was soft and pliable.
Add the garlic and lemon zest to the pot along with the salt and pepper.
Simmer on low heat for about 20 minutes, then turn the heat down to medium-low.
Remove the squash from the heat and pour the sauce over it.
Stir in the tomatoes, parsley, and oregano.
Serve over steamed rice.
